Winter roasted vegetables recipe

It still pretty chilly out there but our colleagues at Love Food Hate Waste have come up with delicious winter warmer to help you eat well for less.  This is an easy way to serve any vegetables but the flavours of the root vegetables are especially delicious done in the oven. You can use any leftover vegetables so feel free to experiment with this. Nutritious and delicious!

INGREDIENTS:

  • 3 potatoes

  • 3 sweet potatoes

  • 3 parsnips

  • 3 carrots

  • 2 crushed garlic cloves

  • 60ml/4 tbsp Rapeseed or Olive oil

  • 1 tsp cumin seeds

  • Freshly ground black pepper

  • Coarse sea salt

METHOD:

1.    Preheat oven to 200°C/400°F/Gas 5.

2.    Cut the potatoes, parsnips and carrots into medium chunks.

3.    Pour oil into a roasting dish and add the vegetables.

4.    Add the crushed garlic, cumin seeds, salt and ground pepper.

5.    Toss all the ingredients together – making sure that the oil is covering all the vegetables.

6.    Place in the oven for 45 minutes, turning occasionally, until crisp and golden brown.
